How to Prepare Chilcano de Pescado: A Traditional Peruvian Dish

Ingredients:
– 1 lb (450g) of fresh white fish, such as sea bass or tilapia
– 1 lb (450g) of fresh corn on the cob

– 1 lb (450g) of red chili peppers
– 1 lb (450g) of white chili peppers
– 1 lb (450g) of garlic
– 1 lb (450g) of cilantro

– 1 lb (450g) of achiote powder
– 1 lb (450g) of cumin

Instructions:
1. Begin by preparing the fish. Clean and scale the fish, then cut it into bite-sized pieces.
2. In a large pot, combine the water, red wine vinegar, and olive oil. Bring the mixture to a boil.
